I had forgotten about these cookies for a long time, but when our rolled oats appeared, I remembered and started baking them very often. I lived in the USA for a large part of my life, and these cookies are a hit there, along with the “chocolate ship” cookies. They are sooo easy to make, and the taste will really surprise you. And besides, oats are healthy.

You will need:
150 g Zelbukis wheat flour 550C
200 g Zelbukis crushed oats
90 g coconut oil or butter
140 g brown sugar
2 eggs (one whole, the other beaten)
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
a few raisins and walnuts or other tasty toppings
Mix flour, salt, baking soda and baking powder together. In another bowl, mix/beat coconut oil, sugar and eggs. Pour this mixture into the flour and mix. Add the crushed oats and all the remaining ingredients. Mix. Leave for 20 min. to stand and mature. Make balls from the dough (or scoop with a spoon and simply place on the baking sheet) leaving spaces. Bake in the oven at 180C for about 15 min, until the bottom is slightly browned, but do not overcook.
After removing from the oven, cool on a wire rack and wait a little while until cool. And then enjoy. If they have done a little, which would be very strange, knowing their taste, put the cookies in an airtight container.
