Spelt is one of the oldest wheat varieties. Spelt grains are resistant to external factors, such as pests or chemicals, because they have a thick protective layer called the bran. It is a genetically healthy grain, containing almost all the nutrients and vitamins necessary for human nutrition. Spelt flour, made from coarsely ground whole grain parts, is the healthiest and most nutritious.

ZELBUKIS FAMILY BANANA CAKE
230 g "Zelbukis" whole grain coarse spelt flour
70 g sugar
2 teaspoons baking powder
¼ teaspoon of salt
450 g (about 4 pcs.) ripe bananas
2 eggs
110 g butter
115 g ground or walnuts (optional)

Lightly grease a baking dish (23x13x8cm) with butter. In a clay dish, mix the dry ingredients: flour, sugar, cinnamon, salt, baking powder and toasted and chopped nuts. In a separate bowl, mash the sliced bananas with a fork until smooth. Add the melted and cooled butter and lightly beaten eggs. Slowly add the dry mixture to the resulting mixture, mixing gently (it is important not to overmix, as this will make the cake tough and crumbly). Pour the batter into the prepared baking dish and bake in an oven preheated to 180 C. Bake for about 40 minutes, until nicely browned. You can check if it is cooked with a wooden skewer: it should remain dry when inserted into the center of the cake. After removing the cake from the oven, let it cool for 10 minutes. Keep in the tin, then remove and cool on a wire rack. Sprinkle with powdered sugar. Delicious!
