I really like all legumes. All of them – peas, peas and gray Latvian peas, green beans, common beans, horse beans. Bean soup, bean stew and spicy baked beans, bean spread and even hummus. I had found a recipe for pea flatbread in the book "Fasting Meals" a long time ago, and I found another flatbread in the book of Italian dishes, made with chickpea flour, but I was never ready to try it. Therefore, I had to follow more precise Italian and French recipes, although they are intended for chickpea flour. But a pea is a pea, even if it is a bean, it still absorbs water in about the same way. The flatbread came out amazing, my husband and I ate the whole half. Although if the flatbread had not been served with cottage cheese fried with onions, it probably wouldn't have fit so much... If you don't have cheese, stewed vegetables, fried onions or just a salad of fresh vegetables are also perfect
Pea flatbread:
1 cup pea flour
1 – 1.5 glasses of water
1-2 tablespoons oil
Salt
Mix the flour with water and salt and leave for at least half an hour or longer to rise. The dough should be about the same thickness as a pancake. Preheat the oven to 230 degrees and place a well-oiled cast iron pan or baking dish in it. Whisk a few tablespoons of oil into the pancake mixture, if the dough has thickened too much, add a little more water, mix well and pour a thin layer into the heated pan. Bake for about 15 minutes, until nicely browned. Remove from the oven, remove from the pan onto a plate and cut into pieces.
Fried cottage cheese with onions and chili flakes
a piece of cottage cheese
a few cloves of garlic
butter
a tablespoon of bread crumbs
chili flakes
Melt the butter in a clay baking dish, sprinkle the bottom with breadcrumbs and add the sliced cottage cheese. Sprinkle the cheese with chopped garlic, salt, chili flakes, put a few pieces of butter on top and place in an oven preheated to 200 degrees. Bake for about 15 minutes or until the cheese melts and is nicely browned.
